Winter Traditions: Handcrafted Soy Skin Honored in Jinhua

As winter blankets Jinhua, Zhejiang Province, the residents of Xucun village engage in the time-honored craft of making tofu skin. Using traditional earthen stoves, they slowly thicken soy milk, allowing a delicate skin to form on the surface.

Skilled hands lift the thin soy skin with bamboo sticks, carefully hanging them on ropes to air-dry. This meticulous process is a tradition that spans several centuries, with over 70 percent of the village adept in the unique techniques required.

The tofu skin produced in Xucun is renowned for its exceptional quality. Made from locally grown soybeans, it boasts a texture as thin as a cicada's wing yet resilient like tendons. Its delicate and slightly sweet flavor has made it a favorite among consumers, showcasing the rich culinary heritage of Jinhua.
